Clean Eating Blueberry Muffins

My daughter loves muffins in her lunch or for a snack and these are delicious! I love that I can pack her a lunchbox full of clean eating food, it gives me so much peace of mind as a mother. 

This recipe was adapted from Eat Well, Live Well & provided by 100 Days of Real Food (Lisa Leake)

Ingredients:
2 ripe bananas, mashed
1/3 cup of milk
1/4 cup of coconut oil
1/3 cup of honey
1 egg
1 3/4 cup of whole-wheat pastry flour
1 3/4 cup fo rolled oats
1/4 cup flaxseed (I was out of flaxseed & they turned out great without it)
3 tsp baking powder
1 tsp cinnamon
1 cup fresh or frozen blueberries

Directions:
-Preheat oven to 350. Line muffin plan with paper cups or silicone liners
-In a large bowl, combine bananas, milk, coconut oil, honey, and egg
-Add dry ingredients and mix until well incorporated.
-Fold in blueberries
-Divide evenly into 12 muffin cups
-Bake 25-28 minutes or until a toothpick inserted into the middle of the muffin comes out clean.
-Cool on a wire rack.

Lunch Brigade Momma....I need you!




We started school three weeks ago, which means I have packed lunch for 15 days...and many of those days I opened my daughter's lunch box at the end of the day to find she hadn't eaten much of what I packed.

I really tried to mix it up this year. I got her a cute Hello Kitty thermos for mac-n-cheese or oatmeal. Day one, she loved her warm mac-n-cheese and was so excited for it the next day....but the thermos came home full! UGH! So, we moved on to apple cinnamon oatmeal, she LOVED it and ate it for two days and then she didn't want it anymore. So, I am at a loss!

I do my best to provide my daughter with healthy food. I choose to buy organic food for my family, as I don't want any of us ingesting synthetic pesticides, chemical fertilizers, or antibiotics. Organic and non-GMO give me piece of mind that I am fueling our bodies with healthy nutrition. And all that matters to my daughter is that her food tastes good. What I love is that she well trained to seek out the organic label when shopping. So, now that she is 7, I have started to let her choose her snacks at the store, I just point her to the section she can choose from and off she goes.

So, I am now on a mission, a mission to get her to eat her lunch and enjoy it! This means I need to be changing it up and giving her a bigger voice in what she wants to eat.

So, here is day ONE, We got new lunch containers and some organic snacks that she picked out. I CAN NOT get this child to eat any bread other than potato bread, so that is where I give in. I am going to work on some new lunch ideas and share them right here! Because I know most of us need help with this!

A Sweet Treat...


Shakeology Cookies! 


I love sweets! They are by far my biggest weakness! So, discovering a sweet treat that is healthy is a big WIN! These are No Bake Shakeology Cookies and they are delicious!  

Ingredients:
1 cup of Chocolate Shakeology (You could also use vanilla-but chocolate is DELISH)
1 cup of Natural Peanut Butter (I use Trader Joe's All Natural Creamy)
1 cup of  organic Quick Cook Oats 
1/3 cup of honey

Directions: 
Mix peanut butter, honey, Shakeology, & quick oats in a bowl until combined. Roll batter into approximately 1 inch balls and flatten between palms into cookie shape. I made 30 little cookies with one recipe. Refrigerate for at least one hour before serving (I left them in the fridge over-night.)

21 Day Fix EXTREME approved breakfast

PB & Raspberry Oatmeal


I love a warm breakfast on the weekend and this is perfect and 21 Day Fix Extreme approved. I never knew peanut butter in oatmeal would be so good! Enjoy! 

PB & Raspberry Oatmeal Recipe

Ingredients:
1 cup water
1 pinch sea salt of Himalayan salt
¼ cup steel-cut oats
1 tsp smooth all natural peanut butter (no sugar added)
2 Tbsp. unsweetened almond milk (optional)
1 cup raspberries, blueberries, blackberries or strawberries

Directions:
1. Bring water and salt to a boil in a medium saucepan over medium-high heat. Reduce heat to low
2. Add oats; cook, stirring frequently for 15-20 minutes, or until water is just absorbed. Remove from heat, let stand for
5 minutes
3. Add peanut butter; mix well. If too thick, add almond milk.
4. Top with fruit (I mixed my raspberries in with the PB-since I used frozen raspberries! YUM!

SHOPPING LIST FOR THIS RECIPE:
Steel cut oatmeal
sea salt or Himalayan salt
Smooth all natural peanut butter
almond milk
fruit: raspberries, blackberries, strawberries, blueberries (I like to keep frozen bags of fruit in my freezer for shakes & oatmeal)

Quinoa Porridge

There is a great new breakfast place in Central Phoenix, SNOOZE,  that is my absolute favorite! They serve organic, healthy eats in a fun atmosphere. My favorite breakfast there is their Quinoa Porridge. This is as close as I could come to it; I think it is quite delicious! Enjoy! 




Ingredients:
1/2 cup cooked quinoa
1 cup milk (I use unsweetened vanilla almond milk, but use any milk you like)
1/2 banana (mashed)-choose a banana that is a little more rip to give added sweetness
1/2 tsp. vanilla extract
dash cinnamon
1 tbsp. chia seeds
Directions:
Combine all ingredients in a small sauce pan and bring to a boil. Turn down to medium low heat. Cook until porridge is
thick and creamy (about 10 minutes.)
Top as desired. Last time I made this, I topped with fresh blueberries & sliced almonds

SHOPPING LIST FOR THIS RECIPE:
quinoa (Costco sells a nice size bag of organic quinoa if you love this stuff as much as I do!)
low fat/-nonfat milk ( I use Unsweetened Vanilla Almond milk)
banana
chia seeds (Trader Joe's)
spices: vanilla and cinnamon

Hummus Deviled Eggs





Hummus Deviled Eggs


Ingredients:
Hard boiled eggs
Hummus
Diced fresh or dried tarragon for garnish


Instructions:

2. Peel, cut in halves, and using a small spoon, scoop out the yolks.  Stuff the eggs with the hummus (try different flavors-Traders Joe’s has a great variety pack), sprinkle with tarragon, and arrange on a plate. Enjoy!
